Place the milk dates and vanilla into a blender or food processor and blend for 5 to 10 seconds. Take the milk mixture out and add to a bowl with the chia seeds. Stir well, cover with a lid or wrap and place in the refrigerator over for over night. When you are ready to eat add some blueberries or strawberries or other fruit of your choosing.

1½ teaspoons nutritional yeast (optional)

My suggestion for making this wonderful baked nacho is to cook the potato ahead of time. You can either bake them in the oven at 450F for 40-50 minutes or until tender. Or a quick easy way to cook the potato is in the microwave. Cooking it in 2 minute intervals checking on tenderness of the potato, don't over cook the potato.
