Not your regular Nachos
Most regular Nachos use the the corn chip or some sort of crispy travel device for the toppings. How about switching that up for a wonderful tasty potato. Make game day a little bit more nutritious by adding these nachos.
1 large baking potato
1½ teaspoons nutritional yeast (optional)
½ cup black beans, either canned or prepared as directed for Black Beans
¼ cup salsa of your choice
¼ to ½ avocado, cubed, sliced, or smashed
Salt and black pepper to taste
Cilantro for garnish (optional)
Lime wedges for garnish
My suggestion for making this wonderful baked nacho is to cook the potato ahead of time. You can either bake them in the oven at 450F for 40-50 minutes or until tender. Or a quick easy way to cook the potato is in the microwave. Cooking it in 2 minute intervals checking on tenderness of the potato, don't over cook the potato. Load the potato up with black beans, your favorite salsa, avocado, nutritional yeast or cilantro if you'd like. Serve as a main dish or a great side.
